Revisit the Melt-a-way Cookie!

It's cookie time again! I spent the weekend baking, and of course I have to make my favorite cookies every year... the Melt-a-way. These are my Grandmother's cookies, and I have never had anything else like them.

Make a batch, you will not be sorry.

Here is the recipe

This year I also created an Eggnog Melt-a-way for a little twist! Just add about 1/4 tsp. of fresh grated nutmeg to the dough, and then 1/4 tsp. of nutmeg and a 1/4 tsp. of rum flavoring to the frosting... mmm!

So Many Vegetables, So Little Time!

I was shocked when my husband reminded me last night that it's Thursday again... time to pick up our weekly box of veggies from Angelic Organics. I am really enjoying the challenge of being forced to use veggies I am not comfortable cooking with; like Fennel and Cooking Greens, but I underestimated the amount of veggies I would actually need to personally consume each week!

Now don't get me wrong... I love my veggies. I was a vegetarian for over 10 years, and my husband continues to be a vegetarian. We eat vegetarian meals almost every night for dinner, I only occasionally make a separate meat dish for Andy and I. But I have found that since Andy was born I started using a lot of pre-prepared foods to supplement our dinners. No more! We didn't even have a chance to eat a frozen pizza this week, a typical weekly "easy-out" staple for us.

Each week we pick up one box from our local drop off point. We have bought 12 weeks of shared crops from Angelic Organics. We don't get to choose our vegetables... it's all random, depending on the weather for the week and what was harvested. We do get a large variety of seasonal, local vegetables. Rick and I thought this would be a great way to "act locally" through our food choices and stretch ourselves a bit culinary-wise.

This is what was in this week's box...

  • 2 Green Leaf Lettuce Heads (looks/tastes great! Last weeks lettuce was "spotty")
  • 5 Bell Peppers
  • 4 small JalapeƱo Peppers
  • 1 Eggplant
  • 1 bunch Swiss Chard (I have no idea how to cook this!)
  • 1 bulb of Fennel (last week was the first time I'd ever eaten fennel... yum!)
  • 1 bunch of Celery (the farm told us they were not happy with the variety they grew this year... and it is really strong and sort of woody celery)
  • 2 Cucumbers
  • 6 ears of Corn
  • 1 Honeydew Mellon (last weeks Cantaloupe was supper yummy!)
  • 9 Tomatoes
  • 1 Bulb of Garlic (looks so moist!)
  • 1 Bunch Anise Hyssop (I have never had this herb in my LIFE!)

That's a lot of veggies right?!? And I still have one Zucchini and one Cucumber left from LAST week! Let alone all the fruit in the house! I think we may need to buy a juicer!

My plans for tomorrow... make Corn Soup, Carrot/apricot muffins, and Tzatziki Sauce... maybe some refrigerator pickle slices. It's a full day!

If you'd like to learn more about Angelic Organics I recommend this blog written by another shareholder; 24 boxes.... it's been very inspiring to me. Eating locally grown/raised food is one small way you can reduce your Carbon Footprint. Read One Local Summer for more inspiration... wherever you live.

This sweet little melon had a face... bonus! I didn't even notice until I looked at the pictures!

Yummy Blueberry Muffins... Super Yummy!

I've been meaning to post this recipe for a few weeks... these are the most delicious Blueberry Muffins I have EVER had! I modified a "Joy of Cooking" recipe to create these. Perfect for those berries you by that turn out to be a tad sour... or are on the smaller side and just not as munchable for snacking.

Blueberry Muffins
Preheat Oven to 400 degrees. Line a 12 muffin tin with paper cups.

Wisk together dry ingredients to sift...
2 cups all purpose flour
1 tablespoon Baking Powder
1/2 teaspoon baking soda
1/2 teaspoon table salt
1/4 teaspoon nutmeg

In a separate bowl, wisk together the following until well blended and little lumps are gone from brown sugar....
2 large eggs
1 cup vanilla whole milk yogurt
2/3 cup packed light brown sugar
1 teaspoon vanilla
6 tablespoons melted butter (use 8 tablespoons if you will be eating the muffins the following day... or keeping them for several days.)

Add dry ingredients to wet and stir to blend until just incorporated. Do not over-mix, batter will not be smooth. Fold 1 1/2 Cups of Blueberries (or one pint) into batter and spoon into 12 muffin cups. Cups will be almost full. Sprinkle with cinnamon sugar before baking. Bake at 400 degrees for 14-18 minutes, or until toothpick entered into 1 or 2 of the muffins comes out clean. Let sit 3-5 minutes before eating. Can be stored in paper bags for 1-2 days or frozen.

Super Mom Makes Candy Sushi!

This week was Super Mom week at the Moore home; with my hubby out of town; for the first time EVER without us... Andy and I were so lonely! But tonight he is BACK! Hooray!

I tried to keep busy, and keep Andy's mind off daddy...and I wanted to spoil him a bit. I asked him (age 32 mo.) what his favorite food was at the beginning of the week, and he actually requested sushi! I think it's because he knows that sushi is MY fave food... But he answered...
"sushi, like in the movies!"
"what movie Andy?", I mean has he been watching Japanese art films while I'm not looking?
"like Monstas INK!" (written phonetically for your enjoyment)

So OK... were gonna have sushi... I had all these big plans. Well you know how THAT goes... and before you scare me with your personal horror stories about toddlers and raw fish; lemme assure you... I would not give a child raw fish... at least raw fish I bought in Illinois; perhaps if we were on the coast... but an Illinois bred California or Unagi Roll never hurt anyone.

Tuesday afternoon I decided we were NOT going to drive the required 10 miles to aquire GOOD sushi... or sushi making supplies... so I improvised... a short trip to Jewel later we were ready to craft some kid friendly sushi.

Forgive the darkness of this picture; I have weird lights in my kitchen...

This is made just like regular sushi rolls... but instead of Rice we have Rice Krispy Treats, and instead of Salmon we use Swedish Fish (only the red ones... or orange perhaps). The "Nori" is made from fruit roll ups! I used a regular ole Bamboo Sushi Mat to assemble the Roll... but a placemat or just a piece of plastic wrap or waxed paper would work too... Here is an AWESOME tutorial on regular sushi roll assembly if you are interested.

The end results...

I think they turned out fabulous! The instruction on how to create the Nigiri style candy sushi's is probably self explanatory... just cut the Krispy Treats as usual and wrap a strip of the roll up around the rice/fish combo. Plus they taste pretty good... I ate a few and didn't die of sweetness.

The super cool pottery slab/tray was created my my Uncle Mike... a wonderful artist who you should check out.

Now I am off to teach a 2 year old how to use chopsticks... wish me luck!

I Heart Cupcakes!

I have started a new addiction... Cupcake Blogs. Just reading them makes me happy and fills my mental tummy. They seem to satisfy my love of cake and cute in one little hand-held bite. They have also enabled me to purchase the following items from Target.

I am in love with this new JUMBO line from Wilton... take a look at Wilton's site for the entire line of Jumbo Sprinkles... NEAT!

The sprinkles on the right are also by Wilton; but were made exclusively for Target. This entire line; paper plates, napkins... it's all amazing; really bright and colorful! Look for this exclusive line in the Easter section. The other stuff was from the kitchen section; Jumbo muffin tin, Jumbo cupcake liners and those nifty sprinkles.

Now on the subject of cupcake blogs; please visit these blogs on a full stomach! Be sure to tell 'em "Sarah and the Stampstars!" sent you!

Pizza for Breakfast :: Why I am Fat.

I'm not a big fan of the traditional breakfast. I crashed early last night... like 8:30. And those of you who know me personally understand HOW odd that really is.

So I woke up at 6:00 AM... which is often when I am GOING to bed. With the house this quiet I figured I would enjoy a nice breakfast of Senseo Coffee and left over pizza. So I did! I have been munching, drinking and editing photos to upload later.

I did a Birthday Party yesterday for a group of 8 year old girls; one of my fave activities. I mean I love doing workshops for grown-ups too; but little girls ROCK! All they wanna talk about is toys, TV and crafts... and that's all I wanna talk about too! I never grew up. Their projects came out SO GREAT! I will share with you later...

I have had a TON of tutorial requests... so today I will work on getting some of those created... Stay tuned for an EASY shaker card, a file folder scrapbook, and a step by step on the Love Notes File I posted a while back. And remember.... I take requests! :)

Have a great Sunday everyone!

The Perfect Cookie

Today I share with you the perfect cookie; "Kima's Melt-a-ways". Kima was my Grandmother, and this was her most famous cookie. It was tradition in our family to go to her home on Christmas Day. She always baked a tray of melt-a-ways for us to share... they were gone BEFORE dinner! Melt-a-ways are so soft and buttery... the name says the rest. The recipe is very simple; and you probably have everything you need in your pantry. They are easy to make, and I promise you will love them.

Kima's Melt-a-way Cookies

1/3 Cup Powdered Sugar
3/4 Cup Cornstarch
1 Cup Flour
sift dry ingredients and blend with...
1 Cup Softened Salted Butter (must use real butter)

Bend until creamy. Refrigerate for one hour. Preheat oven to 350 degrees. Line a cookie sheet with a silpat mat or parchment paper. Roll dough into marbles no larger than 1". Place on cookie sheet and press down lightly with palm. Cookies will not spread much so you can place them close together on the sheet. Bake for approximately 12-14 minutes or until edges turn slightly golden. Allow to cool slightly on sheet before transferring to a rack to cool throughly.

The Frosting

Melt 2 Tablespoons Butter in a microwave safe dish. Combine with 1 Cup Powdered Sugar. Add a very small amount of milk and stir until frosting is smooth and spreadable. If frosting is too watery add more powdered sugar. Kima used to dye her frosting pink; but I like them plain and buttery looking.

Frost cooled cookies with an offset spatula. If you like you can top with sprinkles of your choice or leave plain. Let set until frosting hardens slightly. Store in a covered container for several days or freeze.

Makes approximately 30 cookies. Do not double recipe but instead make 2 separate batches.
